OAT PORRIDGE WITH BERRIES
In the old times, all kinds of porridges formed the sturdy basis of the once so poor and narrow Finnish diet. Try this porridge as a healthy day starter!
250 ml water
less than 100 ml regular rolled oats
pinch of salt
(pat of butter)
25 g bilberries fresh or frozen
25 g cranberries fresh or frozen
25 g blackcurrants fresh or frozen
1 - 2 tbsp honey
Although rolled oats take only about 15 minutes or less to cook, the porridge will be better if cooked for a little longer.
If using frozen berries, take them out of the freezer the night before, cover and let thaw in refrigerator.
Bring the water to the boil in a thick-bottomed saucepan,
add the rolled oats, stirring with a wire whisk. Reduce the heat to minimum and let the mixture cook for a couple of minutes, stirring continually
with a wooden spoon.
Turn off the heat, cover the pan with a lid and let the porridge simmer slowly for about 30 minutes. Stir every now and then to prevent the porridge from burning on the bottom or forming a skin on the surface. Season with salt (and a pat of butter).
Spoon the hot porridge on a deep plate, add the berries on top and drizzle with honey.
Serves 1.
Note: if eating bilberries for the first time, you should be aware of the fact that they will stain your mouth and teeth blue, though not permanently!
